Purple Oatmeal

A fast, healthy and fun treat for those purple-loving little ones. I love oatmeal for our breakfasts because it’s gluten-free, a good source of low residue fiber, and can be sweetened with everything from honey and maple syrup to simple fresh fruit. I prefer rolled oats for their speed of cooking, but the patient spouse-unit always goes for the steel-cut oats. Whichever one, this is a toddler and baby favorite for us.

  • 1/4 cup of rolled oats
  • 1/2 cup water
  • handful of blueberries

Add all ingredients to a bowl and microwave for one minute, ten seconds. Mash with a fork until berry skins color the oatmeal purple and serve.

    The steel cut oats can’t be microwaved (maybe if they have soaked for 8-16 hours first?).

    Rather mix it with cold water 1 to 5 or so, bring to a boil and then let it simmer for 25 to 40 minutes. Instead of blueberries it is also very yummy (though not purple) with cinnamon, raisins and small apple slices cooked in (add them in the last 5 minutes or to taste). Sometimes served with fresh small chunks of banana.
